If you would like to add a little more elegance and colour to your salads, this is a wonderful way to do it. The striking blues, pinks, yellows, oranges and whites will brighten up pots and borders until you need them.

These flowers will self-seed everywhere if you leave them to grow and set seed, meaning that you will be able to enjoy them for years to come. The best thing is, the more you pick them, the more flowers they will produce. We have selected the best edible flowers for salads, cake decorating and preserving. Nasturtium seeds are also wonderful pickled, like capers!

What to do when your plants arrive

  1. Unpack them. Your seedlings will arrive carefully packed in bio-degradable straw, cardboard and paper. They may look a little bit bedraggled from their journey. Don’t panic – this is totally normal and they should soon perk up. Please try and unpack your plants as soon as they arrive, as every extra hour they spend in the box will add to the stress of travelling to their new home.
  2. Give them a drink. Having spent a day or two in the post, your new plants will be thirsty! Stand them up in some fresh water for a few minutes to make sure their roots have been thoroughly soaked before planting.
  3. Plant them out into their forever home! Your plants can’t wait to get their roots into the soil. Plant them out according to the instructions that will have come in the box with them. Make sure you water them in well, and give them plenty to drink until their roots have had a chance to get settled.

Planning your site

Most edible flowers are best eaten raw—simply pick and rinse with water. Flowers will taste and look their best right after they have opened, rather than after they have been open for a few days. There are two important things to remember about edible flowers: first is that not every flower is edible. In fact, some flowers can be poisonous. We have chosen this mix for their taste, colour and how wonderfully simple they are to grow.  The second caution is to avoid flowers that may have been sprayed with an insecticide, fungicide or herbicide.

Nasturtiums. Blossoms and leaves have a peppery flavour like watercress. All colours and varieties are tasty in salads or as garnishes.
Violas. These flowers have a wintergreen flavour and are pretty on cakes and other desserts. Glaze with warmed jelly for a jewelled look.
Calendula. An easy and prolific edible flower. Separate the petals from the centre of the flower and sprinkle the petals into salads. Colours range from pure yellow to orange and red. Remove spent flowers and the plants will bloom continuously from early summer into late autumn.
Bellis. A mild tasting flower that ranges in colour from white through to dark pink. Beautiful scattered on any salad.
Dianthus or Sweet William. Dianthus has a pleasant spicy, floral, clove-like taste, and is ideal for decorating or adding to cakes. They’ll also make a colourful garnish to soups, salads and the punch bowl. It is advisable to remove the white heel at the base of the petal as this has a bitter taste.

Growing tips

Simply pop our plugs into any space you have free in your garden or veg patch. They work wonderfully as combination plants, attracting pollinators as well as brightening up any plot. Water well once planted; otherwise they can mostly be left to their own devises.

What to watch out for

Aphids! Nasturtiums are often used as a sacrificial crop as aphids tend to munch on it rather than your beans, so be sure to check the underside of leaves before eating them. We recommend giving them a good rinse and checking the inside of flowers for insects enjoying the pollen and nectar.
Insects and diseases are best dealt with by cutting back and encouraging regrowth.
